Step one: Let’s fry some cornstarch first for anti-sticking. Prepare 250g of cornstarch. Pour into a pot and stir-fry over low heat until the starch turns slightly yellow. Remove from the pan when cooked, then pour the fried starch onto a plate, spread it out flat, and squeeze the marshmallows prepared later on top to prevent them from sticking.
Step 2: Soak 10g gelatine slices in cold water and set aside; separate the egg whites and yolks from 2 eggs. We need egg whites here. The egg yolks can be used for cooking. The egg whites must be placed in a water-free and oil-free place. In a clean bowl, add 20g of white sugar and beat with an electric egg beater until the egg beaters form stiff peaks.
Step 3: Add 40g of water and 120g of white sugar to the pot, stir continuously over low heat, and cook until the sugar melts. The fire should not be too high, otherwise it will cook into a pot of caramel. Cook until the white sugar is completely dissolved. Melt, add the soaked gelatin sheets, stir quickly until melted, then boil it and remove from the heat, immediately pour into the beaten egg whites, quickly beat with a whisk, until it slowly becomes sticky and lines begin to appear. Finally, beat until the volume becomes twice the original size, and the dripping lines will not disappear when you lift the egg beater.
Step 4: Pour the marshmallow liquid into the piping bag, lift it up and pinch it tightly, cut a small opening, and squeeze it onto the plate previously covered with starch. After all is squeezed out, sift a layer of cooked mixture. Cornstarch prevents sticking. Leave it in a cool place for more than 5 hours until it is set. You can also put it in the refrigerator to set it. Shake off the excess starch on the dried marshmallows and you can eat it.
The marshmallows made this way are sweet and soft, melt in your mouth, not particularly sweet, completely acceptable, not greasy, and very simple to make. If you like it, try it now.
