"Runbing" is also called "pancake". The famous pancakes in Chaoshan are sugar onion pancakes, which were originally snacks in southern Fujian and Chaoshan. It was popular in Quanzhou and later spread to Taiwan Province Province. Pancakes are thin and tender, wrapped in delicious stuffing, fresh and sweet! The stuffing is made of cabbage, winter bamboo shoots, carrots, dried beans, oysters, shrimps and pork belly. Sliced and fried, wrapped in pancake skin, with some seaweed, coriander and peanut crisp, and a little hot sauce. It tastes sour, sweet, spicy, salty and fresh. Quanzhou people and Minnan people have the custom of eating pancakes during the Spring Festival and Tomb-Sweeping Day every year. According to legend, it is related to Cai, a famous minister of the Ming Dynasty.

Cai (A.D. 1577 ~ 1625), whose real name is Kinmen, moved to Tongan. He is an ugly legend with one eye, pockmarked face, lame leg and hunchback, but he worships Assistant Minister Right as Assistant Minister of Ministry of War, and is the military governor of Guizhou, Yunnan and Huguang. However, when Ximiao rebellion was conquered, his ambition was not realized. He died in the army in the fifth year of the Apocalypse (1625) at the age of 49. He was given the title of "Qing Xian" by the ministers of the Ministry of War, including, Ping, Ji 'an Selected Works and Du Fu.

Cai Shi was the governor of four provinces in Yunnan, Guizhou, Hunan and Guangdong, in charge of five provinces. He was busy with official business all day, marking official documents and having no time to eat. Mrs. Cai saw it in her eyes and felt pain in her heart, so she came up with a way to shred fish, shrimp, pork, mushrooms, winter bamboo shoots, carrots, dried beans and other ingredients, stir-fry them into fillings, then make pancakes with flour and roll them into cylindrical fillings. Every time she has a meal, she feeds her husband a "pancake" so that the meal will not affect his office. It is really convenient and delicious. As the saying goes, behind every successful man, there is an extraordinary woman. When you succeed, don't forget the bad wife, you should share the fruits of success with her. Don't be greedy for wealth, be a "Chen Shimei" heartbreaker, and finally die tragically. Later, pancakes spread in southern Fujian and became a local home-cooked snack. The fillings are also diverse, and you can fry anything you want. Especially during the Chinese New Year or Tomb-Sweeping Day, the family sits around the dining table, rolling pancakes and purses with various fillings, taking whatever they want, talking and laughing, making the family happy.
