This is new garlic (fresh garlic), most of the new garlic sellers remove the green stems leaving only the garlic head. Peel off the two layers of skin and clean the root with a knife then wash it twice.

Soak the new garlic in 70 grams of salted water (I use tap water every time, so try to use it to ensure the quality) for 4 hours or more, then drain the water from the surface.

In a saucepan, add 960ml of fresh water and 720g of rock sugar and cook over high heat until the sugar melts. Add 1200ml rice vinegar and continue to boil over high heat for 2-3 minutes, turn off the heat and leave to cool naturally.

After the sweet and sour water has cooled down, add 40ml white wine and mix well.
Put the drained new garlic into a glass vessel and pour in the sweet and sour water to complete the marinating process. Place the container in a cool place away from light.

At least one month marinating in serving, if you have patience it is recommended to serve in three stages, did not marinate for a month to consume a part of it, to see if you prefer to eat the texture of the marinade to a certain stage
