30 crayfish

The method of spicy crayfish
Add more oil to the queen's pot than usual, heat it to 30%, and add pepper, fresh pepper, onion, ginger and garlic to stir-fry for fragrance; Add fragrant leaves, star anise, fennel, oyster sauce, hot sauce and other spices.
Add the washed crayfish and stir well.
Then pour in white wine, light soy sauce and dark soy sauce, and add white sugar to stir-fry for fragrance.
After seeing the crayfish curl, pour in 200ml of clear water, cover it and stew it for 8 minutes on medium fire. Finally, add some salt to taste, and turn the fire to slightly dry the soup.
