Clean the golden pomfret, sprinkle with 0.5g of salt, a little white pepper, and 1ml of cooking wine, spread evenly and marinate for 10 minutes.
Heat the pan and pour 3ml of oil.
Add onion, ginger and garlic and stir-fry until fragrant.
Add water, fish, peppercorns, 1ml cooking wine, and 1g salt. Bring to a boil over medium heat, then reduce to a simmer.
Simmer over low heat for 5 minutes and then remove from the pot and place on a plate.
