Dry cowpeas braised pork recipe ?
Dried cowpeas soak in warm water for about 1 hour, until soft, wash and cut into 5 cm long sections;
Pork carefully remove the hairs, wash, cut 2, 3 cm square pieces; other ingredients wash and dry standby;
High heat iron pot to a slight smoke, pour in the meat and stir fry until browned and out of the oil out of the pot, leaving oil in the pot (meat fat, if more stir frying)
Turn down the heat, reduce the oil temperature to about 30%, pour in the sugar, stirring while simmering, when the sugar melts and bubbles, pour in the freshly sautéed pork, stir-fry evenly;
Pour in 1 teaspoon of soy sauce, stir-fry evenly and then pour in 2 teaspoons of soy sauce, put in the ginger and the rest of the spices, and continue to stir-fry;
Pour in the water, completely cover the ingredients, and then stir-fry evenly.
