Heat the oil in the pan, pour in the beaten eggs, and immediately pour in the rice and mix well. Stick the rice and egg mixture together as much as possible, stir well and put it away for use.
Prepare the ingredients as shown in the figure.
As shown in the picture, soak the mushrooms in advance and cut them for use.
Stir-fry garlic and ginger (onion hasn't been put yet) in a pot, add shredded scallops and mushrooms and stir-fry for a while, then add meat and stir-fry again.
Then pour the stalks and onions into the plate, stir fry, and then pour in the starch. Be sure to stir-fry a lot of soup, or you won't be able to pour it on the rice. Sprinkle onion before serving, stir well and pour it on the egg fried rice immediately.
