Carmine red, also known as acid big red 3R, water-soluble synthetic pigment, bright yellow light red, monochromatic varieties. Soluble in water, glycerol, insoluble in ethanol, insoluble in oil, animal testing without poisoning. Carmine is allowed to be added to 30 kinds of food in 12 categories, including red sausage casings, soy milk beverages, shrimp flakes, candy coating and ice cream.
Properties and indicators:
Yellow at PH = 4.5; orange at PH = 5.0; red at PH = 5.5; purple red at PH ≥ 6.0. Light resistance is better in the interval where the pigment is orange, red to purplish-red, and worse at pH about 4.5 and 7.0-7.5. Good heat stability. It becomes pale or colorless when exposed to iron ions.
