1. Braised pork with potatoes.
Ingredients: Pork belly with skin, potatoes, soy sauce, a little ginger and garlic, sugar, vinegar.
Method: 1. Cut pork belly and potatoes into cubes, slice ginger and garlic, and chop green onions. 2. Put oil in the pan, heat it up, add two spoons of sugar and fresh ginger, stir-fry. 3. Add pork belly and stir-fry until it changes color. 4. Add water to cover the meat, add soy sauce, salt and vinegar, bring to a boil and simmer over low heat for 40 minutes. 5. Add potatoes and continue to simmer for about ten minutes. 6. After the juice is reduced, remove from the pot and it’s done.
2. Potato beef brisket.
Method: Cut the cow na into small pieces and blanch it in hot water. Cut potatoes into cubes. The ginger is scattered. Heat the pan, add oil, and fry the potato pieces for a few minutes. Stir-fry the ginger, add the beef brisket, pour in an appropriate amount of white wine, stir-fry until the meat changes color, then add spices, stir-fry and add water. Bring to a boil and add seasonings. Reduce the heat to low and simmer for 30 minutes, then add the potatoes and cook over high heat for five minutes to reduce the juice. Plate. You can sprinkle some coriander.
3. Potato ribs.
Method: Soak the ribs for 15 minutes, clean them, and blanch them to remove any blood foam. Rinse with warm water and drain. Place the ribs in a hot pan and fry until golden brown on both sides. Stir-fry the ginger slices and spices until fragrant, add the pork ribs and stir-fry, add a spoonful of sugar and continue to stir-fry until the sugar melts. Add soy sauce, stir well and then add beer and rock sugar. Turn off the heat after the pot comes to a boil. Then move the ribs to the pressure cooker, put potatoes on top, and simmer for about half an hour. That's it.
