Plum wine is a kind of wine in which plums are soaked in distilled wine (usually rice distilled wine) for a long time. Therefore, well-brewed plum wine combines the sweetness and softness of fruit wine with the richness of distilled wine. The two styles blend together, making it particularly intoxicating.

Ingredients: 10 catties of green plums (medium ripe), 60 taels of rock sugar, 40 taels of maltose, and 10 bottles of rice wine.

Method 1:

1. Clean the green plums and dry them thoroughly.

2. Put the green plums and rock sugar into the sterilized glass jar, then pour the wine and seal it.

3. It can be opened and drank after 4 months.

4. Add rock sugar three times a month, and finally add maltose.

Naturally fermented plum wine

Ingredients: 10 jins of 7 ripe green plums, 10 jins of plum nectar produced by beekeepers, 5 jins of white sugar, 5 jins of filtered water, 2 taels of calcined oysters Or 40 grams of calcium carbonate.

Operation:

1. Rinse green plums gently once with water. Then install a bamboo sieve and place it in a cool and ventilated place for 8 days to mature (about 3-4 days)

2. Put it into a clean pickle jar, first place the calcined oysters at the bottom, then add plums, honey and filtered water.

3. Ferment for 4-5 days at room temperature around 30 degrees, then add 2 pounds of sugar for the first time.

4. After continuing the fermentation for 1 week, add 2 pounds of sugar for the second time.

5. After another 2 weeks of fermentation, add 1 jin of sugar.

6. Move indoors to a temperature below 30 degrees to continue fermentation and aging for 3 months before opening and bottling.

Note: All materials should not occupy more than 80% of the volume of the jar. During fermentation, the liquid in the jar may expand and overflow.

Features: Using high-purity plum honey as a solution to the technical problem that green plums are too acidic to initiate fermentation,

not only solves the fermentation problem but also adds flavor and nutritional value to plum wine. There is no need to soak plums in white wine to fool consumers.
