Disaccharides Polysaccharides are ultimately hydrolyzed to glucose or fructose when catalyzed by dilute acids.

E.g.

C12H22O12(sucrose) + H2O ==H+== C6H12O6(fructose) + C6H12O6(glucose)

C12H22O12(maltose) + H2O ==H+== 2C6H12O6(glucose)

Hydrolysis of several disaccharides: hydrolysis of one molecule of maltose to become two molecules of glucose;

hydrolysis of one molecule of sucrose to become one molecule of fructose, one molecule of glucose;

hydrolysis of one molecule of lactose to become one molecule of glucose, one molecule of galactose
