Chili Fried Chicken Offal
Ingredients:
6 chicken gizzards, 16 chicken hearts, 1 red pepper, 2 green peppers, appropriate amount of oil, appropriate amount of soy sauce , 20 grams of cooking wine
1. Clean the ingredients: cut off the fat on the chicken heart, squeeze out the blood clots inside, scrape the inside and outside of the chicken gizzards, and adjust the green and red peppers according to taste;
2. Cut the chicken heart into 4-6 pieces lengthwise, and cut the chicken gizzards as thinly as possible; add 20 grams of cooking wine, mix well, and soak for 10 minutes; cut the green and red pepper into thin strips;
3 . Heat the wok and pour in the oil. When the oil temperature is 70-80% hot, pour in the chicken offal and stir-fry quickly over high heat. After most of the color changes, pour in soy sauce to adjust the color. It has the effect of increasing flavor and freshness. Dish out and set aside;
4. Pour the base oil into the wok. When the oil temperature is 50% or 60% hot, add the chili peppers and stir-fry until soft; return the fried chicken giblets to the pan, stir-fry slightly and remove.
