1. Wash pigskin with clear water and drain for later use.
2. Pour a proper amount of water into the pot, then add soy sauce and star anise to boil.
3. After the water is boiled, put the pigskin into the pot and cook it.
4. Take out the cooked pigskin and cut it into strips. Wash pepper, parsley and onion and cut into pieces for later use.
5. Pour proper amount of cooking oil into another pot, then add scallion and stir fry.
6. Stir-fry the pigskin, then stir-fry the peppers, parsley and onions.
7. Add proper amount of salt and chicken powder before cooking.
