2. Eels have a long body shape. When changing knives, be careful not to cut off eels. Cut a knife every 2 cm and the bone will be cut off. However, after the eel is cut evenly, it is washed and ready to be put on a plate.
3. Spread the whole eel evenly with soy sauce, white pepper and ginger. After 5 minutes, put the eel in the middle of the plate, with the back facing outwards, and form a circle.
4. Sprinkle sour plum, sour plum juice and millet pepper on the eel, because sour plum is salty and does not need to be added with salt.
5. Put the plate with the eel in the steamer and steam for 8- 10 minutes. Don't cook it immediately after steaming. Turn off the fire and let it simmer for about 2 minutes.
6. Sprinkle mashed garlic on the eel, then pour boiling oil on it and serve.
