Egg Dumplings

Pork 300 grams
Horseshoes 3

Fatty meat 1 small piece
Egg dumpling recipe ?
Mix the meat filling.
300g of pork filling, add 3g of yellow wine, 3g of dark soy sauce, 3g of soy sauce, 6g of salt, 8g of sugar, 60g of green onion and ginger water, and a little white pepper, and whisk vigorously.
Peel and chop the hoof and add it to the meat mixture and mix well.
Eggs with a little salt and yellow wine beaten.
There are five eggs in the picture, but I added one more when I had more than enough for the meat.
Prepare a round-bottomed pan and a small piece of fat.
Heat the pan over low heat and use the fat to coat the bottom of the pan in a few circles.
Use a good-sized spoon to scoop up a spoonful of the egg mixture, one spoonful being the amount of an egg skin.
Pour the egg mixture slowly into the center of the pan so that it spreads out into a circle.
When the egg mixture on the surface of the egg skin has not completely solidified, add the meat mixture.
Using a spatula, gently scoop up half of the egg skin and turn it over to cover the top of the meat mixture.
Then use the spatula to press the edges of the egg dumplings firmly (like wrapping a dumpling, the edges should be tightly pressed)
An egg dumpling is ready.
Repeat the above steps until all the egg dumplings are done.
Tips
Make more egg dumplings at a time and store in the refrigerator.
Eat as many as you like, in hot pot, warm pot, or steamed food.
