The simplest way to make long eggplants is as follows:
Main ingredients: eggplant and carrots.
Accessories: Add onions, ginger, garlic, soy sauce, salt, water, oil, peppercorns, and starch.
1. Wash the eggplant, remove the stem and dry it, cut it in half lengthwise, and then cut it into long strips of about 8cm.
2. Pour a small amount of water on the eggplant strips to make them moist and evenly covered with starch.
3. Heat oil in a pan until it is 70% hot, then turn to low heat, add eggplant strips and fry until golden brown, remove and control the oil.
4. Leave a small amount of oil in the pot and fry the peppercorns over low heat. After sautéing, take out the peppercorns and add rock sugar and fry until they change color and form sticky strips.
5. Add onions, ginger, garlic, carrots, soy sauce, salt and a small amount of water to boil the sauce. After boiling the pot for 3 minutes, add the fried eggplant strips and stir-fry evenly until the juice is gone, then turn off the heat.
