Method
1. Wash the fresh fish, cut off the head and tail, and set aside.

4. Mix the cut fish pieces and the prepared sauce and marinate for 15 minutes.
5. Use egg white and dry starch to make egg white slurry, and slurry the pickled fish pieces.
6. Heat the oil in a pan over high heat, add peanut oil after scratching the oil. When cooked, put the fish pieces into the oil one by one. After frying, remove from the pan, drain the oil and put on a plate. Fry the fish head and tail in oil until cooked, place both ends of the fish plate into a whole fish shape, and drizzle with sesame oil and serve.
