Main ingredient: 500g of pork elbow.
Accessories: 9 grams of green onion, 8 grams of garlic paste, 6 grams of oyster sauce, 300 grams of old marinade, 2 grams of chicken essence, 5 grams of chili oil, 2 grams of star anise, 7 grams of ginger, 8 grams of garlic, 2 grams of peppercorns, 20 grams of cooking wine, 5 grams of light soy sauce, 3 grams of salt, and 50 grams of pork ribs sauce.
1. Put the elbow in cold water, add ginger, pepper and star anise and cook for 20 minutes.
2. Let it cool, then shave out the bones. Pour in cooking wine, soy sauce and salt.
3. Pour in the rib sauce.
4. Scratch well with your hands and marinate until overnight.
5. The next day, add water to the pot and pour in the old marinade.
6. Add green onion, ginger and garlic.
7. Put the marinated elbows into the pot and cook them to soften.
