Why do Northeasters like to eat pickles, while Southerners hardly eat them?
Why do Northeasters like to eat pickles, while Southerners hardly eat them? Many years ago, I also asked my college classmates. Although they can't explain the specific reasons, they can still find clues from the climate, geographical environment and agricultural production in Northeast China. The following is my opinion sharing:

1 first of all, talk about historical reasons, talk about the rise of the Jurchen nationality in the late Ming and early Qing dynasties, and later renamed it Manchu. Miso is a traditional food of Manchu;

2. From the perspective of agricultural cultivation, the black soil in the northeast, the endless soybean sorghum and soybean are the raw materials of northeast miso, and they are the seasonings that Manchu people often eat all year round. It can be said that every meal of Manchu people can not be separated from miso all year round. It is said that this kind of eating habit was left by Nurhachi when he fought in the south and the north.

3. Northeast miso can adjust the salinity of food, which may largely replace some salt, because in the past historical dynasties, salt was more expensive than rice, and it was common for ordinary people to afford salt. Every Manchu household cooks miso and eats rice, which can confirm this view from the side;

4. Let's talk about the relationship between the eating habits of Northeast people who like soy sauce and the natural climate. The climate in Northeast China is very suitable for the growth of soybeans, which can produce relatively high-quality soybeans, and the quality can also be said to be relatively excellent in the world. The most important thing is that the output is still huge, and it is a serious problem to preserve more soybeans. Therefore, the custom and tradition of making soy sauce have been formed. Delicious soy sauce is delicious with all kinds of vegetables, and it is inevitable to eat it raw;

The natural climate in the northeast makes the fresh vegetables in the northeast especially precious in winter. With soy sauce, all kinds of fresh vegetables are best eaten raw. After all, in the eyes of the northeast, frying these dishes is a waste of ingredients.

6. In winter, the weather is cold. In winter, we eat more scallion dipping sauce. In the eyes of southerners, there may be chemical fertilizer, but in the northeast, when the weather is cold and vegetables are planted, it is not easy to have pests, so everyone is particularly relieved to eat raw;

Take green onion dipping sauce as an example. Maybe in the south of China, green onions are hard to eat raw. The reason may also be that the natural climate affects the quality of green onions, but in the cold northeast, the quality of green onions may be more tender.

Let me give you a simple example. Hubei is rich in lotus roots, and especially likes ribs lotus root soup. Glutinous rice tastes the best, but outside Hubei, lotus roots are also planted. Lotus root is crispy in taste, with low starch content, which is not up to glutinous rice, which has a great relationship with natural climate and other aspects.

In the fruit shop in Yunnan, I actually saw a lotus root lying next to all kinds of fruits, and the price was not cheap. Just ask, because of the natural climate, the local lotus root is a local fruit.

Many things are unexpected to us, and we can't believe them unless we see them with our own eyes. However, many times, they are all natural selection, and we should constantly change ourselves to adapt to this nature.
