Shandong is a vast country with a large population, so there are often several ways to call the same thing in dialect. Take jiaozi for example, there are about four ways to call it:
1 Tiezha (pronounced gu zha). The generation of Jiaodong Peninsula called jiaozi Tiezha, including Anqiu, Zhucheng, Changyi, Gaomi in Weifang and the whole Qingdao area. As the saying goes, "it is better to be satisfied than to be cooked, and it is better to be tied up than to be delicious". 2 steamed stuffed bun is the most widely used name. In order to distinguish it from the real steamed stuffed bun, people call jiaozi a little steamed stuffed bun, while the real steamed stuffed bun is called a big steamed stuffed bun. Areas include Jining, Tai 'an, Zibo and northern Weifang. Of course, this is also the most rustic name, so it is no longer heard among young people nowadays.
3. Flat food, this term is a vivid summary of the external characteristics of jiaozi. But I want to emphasize that the flat food in the south and the north is not a kind of food. The flat food in the south is actually wonton, while the flat food in the north is dumplings. This title should have originated from Shanxi, which immigrated to Shandong in the early Ming Dynasty, so this title also immigrated to Shandong.
4 dumplings, the standard name, are imported to Shandong people. Originally, there was no such name among the older generation. Later, with the popularization of Putonghua and the spread of various audio-visual films, this fashionable name was adopted by young people and gradually replaced the original dialect name. Nowadays, young people have basically unified the name of dumplings.
Finally, there is jiaozi. In Shandong, this is basically just a written expression. I have never seen anyone use such awkward words in spoken English.
