Practice:
1. Prepare the ingredients.
2. Cut the pork belly into 2 cm square pieces; Put the onion, ginger slices, star anise and pepper into the seasoning box
3. Add water to the pot, add three slices of ginger, add cold water to the chopped pork belly and blanch it. After boiling, skim off the floating foam and take it out to control the water for later use
4. Add a little vegetable oil to the wok, turn on the low heat, and add rock sugar to fry the sugar color. When the rock candy blocks are slowly liquefied and slightly foamed, even if the sugar color is fried
5. When the sugar color is fried, stir-fry the pork belly for several times, add appropriate amount of boiling water, and burn for 3 minutes
6. Prepare the pressure cooker while the fire is burning, and put the soy sauce and seasoning box in the pot
7. When the time comes, put the pork belly and soup together. Burn for 2 minutes
8. Start another wok, add a little vegetable oil, add garlic, turn on the minimum fire, and turn off the fire after the garlic surface is browned
9. Turn off the fire after the pressure cooker expires, and leave it for 15 minutes, carefully remove the pressure valve, open the lid, pour the pork belly and soup together into the wok for stir-frying garlic, add 3 crystal sugar, and turn on. When the soup is rich and begins to bubble, add salt to adjust the taste, and then burn for another minute, then turn off the heat and plate.
Tip:
1. When blanching, put cold water into the pot, and try to skim the floating foam as clean as possible. It's best to put the pork belly into the colander piece by piece with chopsticks, so it's cleaner.
2 Just slightly bubble when frying the sugar color, and don't fry it. When putting pork belly, take the pot cover in one hand and pour it into the pot in the other, which can effectively prevent scalding.
3 Step 5, add boiling water, and keep the fire boiling for 3 minutes. It is not recommended to omit it.
4 If there is no gas pressure cooker at home, you can use an electric pressure cooker instead, and just choose the pork ribs file.
