As a standard northerner, the education I received since I was a child is that the New Year's Eve dinner must be rich and all kinds of food can't be less.

Among them, fish that means more than a year, meatballs that mean reunion, chickens that mean signs, and rice cakes that mean rising step by step are all indispensable.

Below I will focus on introducing these kinds of ingredients to you, and I am used to making dishes every year.

First of all, fish

We are inland here, and we can hardly see any marine fish. We only eat freshwater fish such as carp, silver carp and grass carp. Because we don't know much about fish, our cooking methods for fish are relatively simple, and stewed fish is the main method.

Later, I learned about a plate of steamed guppies from the internet, and then I thought it was very good and beautiful. Then my family changed this dish.

Second, meatballs

However, with the continuous improvement of living standards in the past two years, the old people are a little tired of eating meat on ordinary days, so they began to like vegetarian meatballs instead.

My vegetarian balls are mainly tofu balls and radish balls.

Radish balls are mainly green radishes and carrots. Shredded and blanched in water, then made into balls with egg starch flour, and then fried.

Personally, I prefer tofu balls, but others in my family seem to prefer radish balls.

Third, chicken.

Chicken is more complicated because there are many dishes to cook.

My family started raising chickens when I was very young, and then I killed them myself every year during the Chinese New Year. Every New Year's Eve, an iron pot is put on the stove, and then there are ribs, chunks of meat and chicken in this pot. Add all kinds of spices and cook them slowly until they are particularly tasty, and then take them out and separate them directly. The chicken made in this way is very simple, but it tastes bad.

Children all like to eat chicken wings with cola. In recent years, the most common new year's eve dinner in my family has become coke chicken wings, coke chicken wings roots and so on. This sweet taste makes many children eat their bellies round.

Stewed chicken with potatoes is the most common way to eat in northern China. Of course, my family often cooks one. Potatoes full of chicken soup are more delicious than chicken itself, and they can be robbed almost as soon as they are served.

Fourth, rice cakes.

Although almost every place will fry rice cakes during the New Year, the ingredients used in different places seem to be different. Some places are glutinous rice flour, while others are white flour. And we must be special here, because we use millet noodles here.

Millet has been planted in China for thousands of years. Traditional five-grain rice, millet, millet, wheat and millet should be the smallest planting area now. Our climate here is just suitable for planting millet, so it has been a tradition to make rice cakes with millet flour for so many years.

The rice cake made of millet flour has one characteristic, that is, it is very soft and glutinous, and the feeling of this soft and glutinous rice flour is different and not sweet. The rice cake made of millet flour can hold many fillings, generally there are many red bean fillings and brown sugar fillings, then there are shredded potatoes fillings, leek tofu fillings and so on.
