Guangbing is a specialty of Fujian. Light cake, a traditional snack in Fujian Province, is a round cake snack with a diameter of about 6cm and the size of a palm, with a small hole in the middle. It is said that Qi Jiguang, a hero who fought against Japanese invaders, couldn't eat for several days in rainy weather, so he made the simplest cake and hung it on soldiers with ropes as military dry food. Another way of saying it is that after Qi Jiguang liberated the imprisoned people, he gave his own dry food to the people to satisfy their hunger, so the people called it "following the light cake".
Light cakes are mainly distributed in Songxi County, Pucheng County, Jianyang District, Jian 'ou City and Shunchang County in Nanping City in northern Fujian, Fuzhou City, Ningde City and Xiapu County in eastern Fujian and Youxi County (Meixian Town) in Sanming City in western Fujian.
Historically, making simple "light cakes" came first, that is, the so-called dry food for marching to kill pirates ordered by General Qi Jiguang. From the word "light", it not only refers to the characteristics of cake shape and color, but also includes the "light" from Gwangju and in memory of General Qi. The connotation of food culture is rich and profound, and it is very historical.
