How to make green tea cake
Ingredients:
1. 3/4 cup flour (80g, 13 tablespoons)
2 . Green tea powder 10 grams
3. Salt 1/8 spoon (2 grams)
4. 1/2 cup of granulated sugar (75 grams, 8.3 tablespoons)
5. Vegetable oil 1/4 cup (56 grams, 4 tablespoons)
6. 1/4 cup of water (or milk) (60 grams, 4 tablespoons) [Meishijie]
7. 4 eggs, room temperature, separate the whites and yolks. Place the egg whites in a large, clean, oil-free basin.
8. 1/4 tsp of white vinegar
Method:
1) Mix the flour, green tea powder and salt and sift them into a large bowl.
2) Beat the egg yolks, add sugar, water (or milk), and oil in sequence, and stir evenly.
3) Pour the sifted (1) into (2) three times, and stir evenly, but remember not to draw circles to avoid gluten in the flour and affecting the taste.
4) Pour white vinegar into the egg whites and beat the egg whites with a whisk until the egg whites swell several times and the sharp corners can be easily pulled out, or a small spoon can be easily held upright.
5) Pour 1/3 of the beaten egg whites into the batter, and stir from bottom to top. Remember not to draw circles to avoid defoaming of the egg whites and affecting the puffing effect. (Preheat the oven at this time)
6) Pour 1/3 of the egg whites into the batter and stir.
7) Pour the batter that has been mixed with 2/3 of the egg whites on top of the remaining 1/3 of the egg whites. Then use a rubber knife to stir the batter from bottom to top until even.
8) Pour the batter into the paper cup, put it in the oven, bake at 180 degrees Celsius for 30 minutes.
