First, prepare the ingredients needed to make minced pork tofu. Prepare a piece of old tofu, which weighs about one pound. Then prepare a piece of pork, which weighs about three ounces. After preparing the pork and old tofu, let's prepare one spring onion, five cloves of garlic, and three millet peppers. Continue to prepare appropriate amounts of bean paste, cooking oil, and cooking wine. Finally prepare a bowl of water starch.

2. Let’s deal with the tofu first. Rinse the prepared tofu first, then put it in a bowl, add water to the bowl and soak it for 20 minutes. There are several ways to remove the beany smell from tofu. One of them is to soak it in water. However, this method takes a little longer. If you are in a hurry, you can also blanch the tofu.

3. After soaking the tofu, let’s chop the onions, garlic, and millet. Chop the shallots and put them on a plate for later use. Pat or press the garlic first, then cut it into small pieces. 6. Add a little oil to the pot again, then add the minced pork and fry until it changes color. After frying, add chopped green onion, spicy millet, and minced garlic and continue frying. Then add a spoonful of bean paste, stir-fry, add a little cooking wine to remove the smell, and finally add an appropriate amount of water. First mix the water and various ingredients evenly, then add the tofu and stir-fry.

7. Cover the pot and simmer for three minutes to allow the tofu to fully absorb the soup. After the time is up, pour a little water starch to thicken it. When the soup is thickened, sprinkle in a little chopped green onion. Stir-fry it and it's ready to serve.

1. We did not add edible salt to the minced pork tofu because the bean paste is very salty.
