I've been to Guizhou several times, and I've eaten a lot of Guizhou cuisine. Guizhou cuisine gives me the impression that few serious Guizhou dishes are well-known and taste very ordinary, but there are many kinds of Guizhou snacks, some of which are not only famous in Guizhou, but also known by many people all over the country and taste very good. Let me share with you my impression of local snacks, which is not to be missed in Guizhou.
1. Mutton powder
Mutton powder is definitely the first snack in Guizhou. It can be eaten in many cities in Guizhou, with a slightly different taste, and the overall method is similar. Mutton powder of Zunyi, Liupanshui, Bijie and Qianxi has gradually formed. Fresh mutton with smooth rice flour, fresh mutton soup and various seasonings, as well as characteristic oil pepper, is the mutton powder in Guizhou. Mutton is moderately fat and thin, oily but not greasy, and rice flour tastes smooth. The mutton powder made by combining the two makes people want to eat it.
2. Tofu Fruit
Tofu Fruit is actually a kind of baked tofu. This snack is popular in Guiyang, especially for young people, who like to eat this bean product, and this snack also has a nice name called Love Tofu Fruit. Cut the tofu into pieces, then cover it with a wet cloth for fermentation, and prepare the dip according to your own preferences. After the tofu is baked, cut the side into a mouth, scoop in the mixed seasoning and use it. It is spicy, fragrant, tender and hot, and appetizing.
3. Rice tofu
Rice tofu is not only available in Guizhou, but also can be eaten in several provinces around Guizhou, and my favorite is Guizhou rice tofu, which is the most famous summer snack in Guiyang. Rice bean curd is made by soaking new rice in water, grinding it into slurry, heating it on slow fire and boiling it with brine. Cut the rice tofu into small pieces, mix it with your favorite seasoning and you can eat it. Of course, you can also dip it in the seasoning. It tastes cool, flexible and Q-elastic, and it is really cool to eat in summer.
4. Huaxi beef powder
Huaxi beef powder is a famous snack in Huaxi, Guiyang. Its soup is delicious and everyone who has eaten it is full of praise. Boil the succulent beef bones into fresh and thick soup, add smooth rice flour, add mellow beef, add appetizing pickled cabbage, decorate with fresh coriander, and a bowl of steaming Huaxi beef powder will appear in front of you. Friends who like spicy food can put some Chili oil, which tastes even better!
5. changwang noodles
changwang noodles are one of many snacks in Guizhou, which are full of color, fragrance and taste, and the changwang noodles in Guiyang are the most delicious. Sausage noodles contain pig intestines and pig blood, so they are called sausage noodles. Sausage and Wangsao were made from fat sausage and blood curd respectively, then crispy sauté was made from pork belly, and then red oil was made from sausage oil, crispy sauté and chili oil, thus forming the basic characteristics of "three sauté s" with red oil in sausage curd noodles. It seems that red oil feels spicy and greasy, but it actually tastes red but not spicy, oily but not greasy.
6. Anshun wrapped roll
Wrapped roll is a special snack in Anshun, which can be seen in the streets of Anshun and is quite popular in Anshun. The rice skin used for wrapping rolls is very thin, and the filling can be seen through the rice skin. There are many kinds of fillings in it, and the common side dishes are bean sprouts, broken ears, kelp, shredded radish, chopped green onion, peas and so on. The delicious wrapped roll mainly lies in the bottom material applied on it. According to the different bottom materials, the wrapped roll generally has five flavors: chicken pepper, green pepper, fried lobster sauce, dried tofu with minced meat and minced mushrooms. Take a bite, the entrance is first refreshing and cold, and then bite down, and the special fragrance of various fillings diffuses, which is wonderful.
The above are my favorite six Guizhou snacks, which are really quite delicious. Friends who come to Guizhou must try them. Of course, there are many snacks in Guizhou. Please leave a message to add.
