The food I bring to you today is corn pancakes.
This pancake is made with cornmeal, flour, eggs, honey and other ingredients. If you don’t like sweetness, you can enjoy it without adding sugar.
It is a good choice whether as a snack, a staple food or even for breakfast.
There used to be a supermarket near my home that sold these corn tortillas and had a microwave oven to heat them up. Every time I went to the supermarket, I had to buy a few to eat. Later, this supermarket stopped selling them, so I had no choice but to make them myself.
Fortunately, I once asked about the ingredients for this pancake and fumbled a few times to make it. At first, I couldn't figure out the proportion of ingredients, but later I made it successfully twice. It tastes the same as the one made by the supermarket aunt, and it's delicious.
The following Xiaocai will share with you my last successful experience.
Name of the dish: Corn Pancake; Ingredients: 200 grams of cornmeal, 300 grams of ordinary flour, 1 egg, 25 grams of honey, 250 grams of warm water, 5 grams of yeast, about 20 grams of white sugar (add or subtract according to your preference); Features: Soft
Sweet, healthy and nutritious.
The method of making corn pancakes is as follows: 1. Make the dough first: Pour the weighed cornmeal, ordinary flour, yeast powder, and white sugar (if you like it sweet, add more, if you don’t like it, add less or not at all) into a clean basin.
Then beat another egg into the basin, add 25 grams of honey (the honey should be in liquid form, if it is solid, add a small amount of hot water to dissolve it), and prepare 250 grams of water (the water should be added according to the thickness of the flour as a reference)
Oh), use chopsticks to stir into a flocculent shape while adding water, and then use your hands to knead it into a smooth dough.
2. Then cover the dough we made with plastic wrap and ferment it at room temperature until it doubles in size (note that we must control the temperature when fermenting. If the temperature is low in winter, ferment it on hot water); wait
After the dough is fermented, knead the New Year's dough evenly at any time, then roll it into a long strip, and cut it into several uniformly sized pieces with your hands or a knife.
3. Then knead each ingredient evenly, roll it into a small long strip and rub both ends. After all the ingredients are kneaded, cover it with plastic wrap and let it rise again for 15 to 20 minutes (sprinkle an appropriate amount of flour on the panel in advance
Anti-stick), after the time is up, observe that our cake embryo becomes obviously larger and fatter, and it is ready to be baked at this time.
4. You can also heat a frying pan or an electric baking pan. Add oil to the hot pan and put in the cake embryo we prepared. After about half a minute, the bottom will be fixed. Add a small half bowl of water, cover the lid and turn to low heat to bake slowly. If it is electric
If you are using a pan, do not cover the pan to avoid flattening the pancake (if you like the frosty feel of the pancake, you can use starch water instead of water).
5. After a few minutes, you will hear a crackling sound in the pot. All the water has evaporated. Use a shovel to lift the bottom to see if the color is too dark. If the color is not satisfactory, fry it for a while on low heat.
Until golden brown.
After frying one pot and then another, come and try it. The color is attractive, the corn tortillas are crispy on one side and soft on the other.
At this point, our tortillas are ready.
The color is attractive, and it is a good choice whether as a snack or as a staple food.
Every time I make it, I finish it in one meal. I don’t like too much sugar. It has a light sweetness and can be eaten by the elderly and children.
