1. Qingjian pancakes: Pancakes are a unique local snack in Qingjian County. They are made of buckwheat and are very famous in northern Shaanxi.
The process of making Qingjian pancakes is relatively complicated. First, you need to coarsely grind and peel the buckwheat to get the grits. Then soak the grits for a whole day and night, put them into a special cloth bag, add water, squeeze and knead them repeatedly for dozens of times, and mix the starch with them.
It is extruded in the form of a dough paddle, mixed with water according to a certain ratio, and then made into a 20 cm large paper pancake using a special pancake pan. The pancake is then slowly cooked over a slow fire and served with a special dipping sauce.
Generally, there are two types: ginger-garlic soup and persimmon sauce. Cold vegetables, dried tofu, pork head, elbow meat, etc. can be wrapped in pancakes to make them taste more delicious.
2. Yang’s stew: Yang’s stew is the most distinctive flavor of Qingjian.
The raw materials are mainly composed of vermicelli, lean meat, potatoes, vegetables, etc. It has both meat and vegetables, is delicious, nutritious, reasonable, economical and affordable, and is one of the best in Qingjian.
3. Shizuiyi pancakes: Shizuiyi pancakes are made with flour, chopped green onion, etc. as the main raw materials. They are golden in color, distinct in layers, crispy on the outside and tender on the inside. They are deeply loved by the people.
4. Mutton powder soup: For mutton powder soup, choose fat and strong sheep. Cut them into pieces and put them in the pot with clean water.
When eating, add various spices to the original soup, cook the vermicelli, and finally add mutton cubes, coriander, green onions and peppers.

The eight bowls of Qingjian are divided into soft eight bowls and hard eight bowls. The soft eight bowls refer to four bowls of meat dishes and four bowls of vegetarian dishes, while the hard eight bowls have eight bowls of meat dishes, including crispy chicken, meatballs, stewed mutton,

6. Qingjian Huangjian: Peel the shells of hard millet, soak in water, drain, grind and pass into a basket. Blanch a quarter of the flour into a paste with boiling water and steam it in a pot. Combine the steamed batter and the remaining flour.
Mix them together and put them in a basin for fermentation. After fermentation, add an appropriate amount of alkaline water and mix with water to make a batter.
Put the fried pancake on the fire, put an appropriate amount of cooking oil on the bottom of the pan to prevent it from sticking. After the oil is hot, pour a small spoonful of the mixed batter into the hot pan, then put the lid on the pan and cook for about three minutes.
After about a minute, it will be ready. Open the lid of the pot, fold it in half with a spatula, take it out and serve.
