Steps
1. Select a 7:3 ratio of lean and fat for the pork.
2. Prepare garlic and red pepper.
3. Prepare dry soy sauce, Jiu-Shun ginger juice and soy sauce.
4. Dice the pork.
5. Remove the 2:1 ratio of dried yellow sauce and dashi and place in a small bowl.
6. Add some water to melt the sauce.
7. Chop the garlic and red pepper and set aside.
8. Put oil in the frying pan, pour in the diced pork when the oil is hot.
9. Stir-fry the pork to brown.
10. Add red pepper and garlic.
11. Add Jiu-Shun ginger juice, soy sauce, oyster sauce and chicken juice concentrate.
12. Add the melted sauce.
13. Mix well, add the right amount of water and cover to simmer.
14. Cook until the sauce is thick and the soup is bright red, pour in sesame oil and season to taste.
Tips
1. This fried sauce, do not need to add salt, yellow sauce contains enough salt.
2. You can make more fried sauce at a time and store it in the refrigerator for use as a side dish at any time.
