What is the ancient swallow food modern?
Swallow dish is actually radish, but it is a unique Luoyang flavor dish. According to legend, when Wu Zetian was in Luoyang, a radish weighing tens of pounds grew in a vegetable field in Dongguan. The vegetable farmers thought it was amazing, so they dedicated it to Wu Zetian. The chef cut the radish into silk and steamed it with powder, and served it with delicious soup. After eating it, Wu Zetian felt very delicious and had the flavor of bird's nest, so she named it "Yancai", which has been passed down to today. In the 1970s, when Premier Zhou accompanied Canadian Prime Minister Trudeau to visit Luoyang, the chef carefully prepared Yan dishes for the banquet. After eating, the two Prime Ministers were full of praise and asked for two dishes in a row. Because there are peony flowers carved in the dish, Premier Zhou also called it "peony swallow dish" humorously.
