I. Ingredients
Main ingredient: 500g scallops
Accessories: 2 green onions, 2 slices of ginger, 2 cloves of garlic, 1 tablespoon of red bell pepper, 1 tablespoon of cooking wine, 2 tablespoons of soy sauce, 3 tablespoons of sugar, 4 tablespoons of vinegar, 5 tablespoons of water, 15 grams of flour, 5 grams of salt
II. When you buy scallops, you can ask the fishmonger to help you clean up the scallops and remove the head and tail. Wash and cut into about 2-inch sections, sprinkle with a little salt and cooking wine and marinate for 15 minutes.
2. While the fish is marinating, prepare the ginger, scallions, and garlic; make a sweet-and-sour sauce by combining 1 tablespoon cooking wine, 2 tablespoons soy sauce, 3 tablespoons sugar, 4 tablespoons vinegar, and 5 tablespoons water.
3. Dredge the marinated scallops in a thin layer of flour on kitchen paper towels to remove any moisture, and shake off the flour. Heat a small amount of oil in a pan and fry the scallops until golden brown on both sides, then remove from the pan.
4. Stir-fry the red bell pepper in the remaining oil, then add the green onion, ginger and garlic.
5. Add the fried scallops, stir in the sweet and sour sauce, and add more water if the soup is too small.
6. Bring to a boil and simmer over low heat for 10 minutes.
7. Then collect the soup over high heat to thicken the soup.
