The origin of glutinous rice chicken is said to be the night market in Guangzhou before the liberation of China. It was initially steamed in a bowl, but later changed to be wrapped in lotus leaf by hawkers to make it easier to sell on their shoulders. Ancient glutinous rice chicken is stuffed with glutinous rice, scallop, dried shrimp, or boneless chicken wings. Traditionally, a large portion of glutinous rice chicken is three to four taels of rice, and eating a glutinous rice chicken is almost half a meal. Therefore, since the 1980s, Guangdong restaurants have introduced the same material, but half the size of the "pearl chicken", very popular with customers.
