Ingredients:
1000 grams of golden dates
300 grams of pineapple
300 grams of oranges
400 grams of sand Grams (40 of the total weight of the fruit)
Appropriate amount of lemon
Appropriate amount of whiskey:
The first day (preparatory work)
1. Wash the golden dates with running water and dry them.
2. Cut the golden dates into small circles 0.3 cm wide.
3. Remove the seeds from the golden dates.
4. Remove the head and tail from the pineapple and peel off the peel.
5. Cut off the pineapple core and keep it for eating.
6. Cut the pineapple pulp into small dices.
7. Wash the oranges with running water, dry them, peel them, remove the white film, and remove the seeds, leaving only the pulp.
8. Put the golden dates, pineapples, and oranges into the pot together, and squeeze in the lemon juice.
9. Pour in the sugar and stir evenly, let the fruit, sugar and lemon juice begin to form the candied honey.
10. After closing the lid, place the candied food in the refrigerator overnight.
11. Clean the glass jar containing jam, sterilize it with hot water or oven and dry it completely. The next day (cooking jam and bottling)
1. Take the fruit out of the refrigerator.
2. Bring to a boil over high heat, then reduce to medium to low heat and simmer until the fruit is completely softened.
3. Adjust the heat timely and remember to stir to avoid burning and sticking to the pot. Cook until the jam becomes sticky. (I usually don’t adjust the heat anymore, and will fix it on medium-low heat, unless I need to leave the kitchen temporarily.)
4. Add whiskey to garnish according to personal preference before serving, and stir Evenly.
5. While the hot jam is still below 85 degrees, fill it into a sterilized and dried glass bottle, and fill the jam to nine-tenths full to avoid the bottle being full of air and causing the jam to become perishable.
6. Tighten the lid and place the jam upside down. After cooling, the jam in the bottle will naturally form a vacuum due to thermal expansion and contraction.
7. Handmade jam does not contain preservatives. Keep the jam in the refrigerator as much as possible.
8. Pineapple, Orange and Golden Date Jam, completed.
