Method:
Pork spine ingredients: ginger, scallions (Beijing scallions or green onions), aniseed, pepper, cinnamon, fennel, bay leaves, sugar, dark soy sauce, vinegar , oil, salt
1. Boil water in a pot, blanch the backbone in water, then boil a little vinegar, cover the pot and cook for 3 minutes. Remove the bones.
2. Put a little oil in the pot, heat the oil to 60%, add sugar, and then stir the sugar continuously. As soon as the color of the sugar turns black and smokes, add a lot of water.
3. After putting the pot under water, add ginger (peeled, cut into pieces and patted, remember to slice), scallions (cut into sections, patted), aniseed, peppercorns, cinnamon, fennel, and bay leaves. Once the water boils, add the backbone. Then add an appropriate amount of dark soy sauce and salt.
4. 5 minutes after the water boils, turn down the heat and simmer for 30 minutes, then turn off the heat and simmer for 5 minutes. Remove from the pot and serve in a bowl.
