The difference between bread flour and flour has five points, as follows:
1, the main raw materials are different. Bread flour is the main raw material for durum wheat, is a kind of shell harder wheat, and ordinary flour with the main raw material for wheat, is ordinary soft wheat, so the two main raw materials are different;
2, color texture is different. Bread flour because it is made of whole wheat with hard wheat, so the wheat bran and wheat germ are all polished into powder, the overall powder color yellowish, grasping more rough, not sticky, and ordinary flour color white, powder grasping soft, more sticky;
3, protein content is different. Bread flour protein content is generally about 12.5%, and high gluten flour close to the ordinary flour is gluten flour, protein content between 9.5% -12%, so the protein is different;
4, the use of different. The main use of bread flour for the production of bread, while the main use of common flour for the production of buns, steamed bread, rolls, cakes and other common pasta, the use of common flour is much larger than the bread flour;
5, different taste. Bread flour made of bread fluffy and strong, the texture is more gluten, wheat flavor is obvious, the aroma is attractive, while the ordinary flour made of pasta texture fluffy but no strength, soft taste, easy to digest, wheat flavor is light, the two taste different.
