First marinate the fish head with cooking wine and fine salt for 10 minutes; cut the tofu into small cubes, crack the garlic with a knife, cut the chives into sections, slice the ginger, and slice the red pepper:
1. Heat the pot, add 1 tablespoon of oil, add the drained tofu cubes and fry slowly over low heat; flip with chopsticks halfway through and fry until golden brown on all sides;
2. Heat oil in a hot pan, put in the fish head that has been wiped dry and fry over low heat; after frying one side, fry the other side and add ginger slices to fry together. After frying, add water and bring to a boil;
3 , add the fried tofu and all seasonings, bring to a boil over high heat and then turn down to low heat;
4. Finally add green onion segments and water starch to thicken the sauce, put on a plate and place red pepper on the surface.
