Second: the main formula
Formula 1:
Ingredients: star anise 1 0g, cinnamon 9, fennel 3, citronella 2, galangal 5g, pepper 5, dried pepper 5, Amomum tsaoko 3( 1 piece), Amomum tsaoko 5( 1 piece), clove 1 piece and geranium/kloc-piece.
Accessories: rock sugar 15, cooking wine 15, 60 scallions with whiskers (one), ginger 15, salt 20 (appropriate addition), and soy sauce 10 (appropriate addition).
Main applications: pure and fragrant, suitable for marinating tofu, lotus root, pork belly and so on.
Formula 2:
Ingredients: 6 grams of star anise, 7 cinnamon, 5 fennel, 3 pepper, 2 dried peppers, 3 Amomum Tsaoko (1 piece), 5 Amomum Tsaoko (1 piece), 0.7 clove, fragrant leaves 1, three nai 1, and Amomum villosum/kloc-. Crushed and packed in gauze bags.
Accessories: rock sugar 15, cooking wine 15, 60 scallion with whiskers (one), garlic 15, tomato 10, salt 20 (appropriate addition), soy sauce 10 (appropriate addition).
Formula 3:
Ingredients: 8 grams of cinnamon bark, 5 grams of star anise (4 roses), 3 grams of fennel (1 scoop), 3 grams of pepper (2 scoops), 3 grams of Amomum Tsaoko (1), 5 grams of Amomum Tsaoko (1), 5 grams of Amomum Tsaoko (1), 4 cloves (4) 1 g, 3. 5 kg of water and 3 kg of pork belly Note: 2 g of dried pepper, licorice 1 g, fragrant leaves 1 g and red dates can be added appropriately.

Formula 4:

Main application: it is light and suitable for marinating duck tongue, chicken gizzard, quail, wing tip and other raw materials.
