Don't buy crabs oxygenated in water. Basically, it lasts for a few days. The meat is empty. After cooking, open a bag of water. It's stale. You can't eat good crabs at all.
Pick crabs
The first trick: look at the crab's calf. Whether a crab is fat or not depends first on the two calves at the bottom of the crab. If its calf looks particularly round and feels full when pinched, it is a fat crab, and vice versa.
The second trick: look at the two horns protruding from both sides of the crab shell. Looking at the bright place, the crab's stomach is up. If it is transparent, it is a thin crab that is soft to pinch. If it is dark fleshy, it will be fatter.
