1. Peel off the shells of the tender green bamboo shoots, wash and chop into cubes.
2. Cut the green garlic leaves into small sections.
3. Beat the free-range eggs and set aside.
4. Heat the oil pan, stir-fry the tender bamboo shoots until half cooked.
5. Add green garlic leaves and stir-fry slightly.
6. Add salt to taste and stir-fry evenly.
7. Pour in the beaten egg liquid.
8. Stir fry evenly.
9. Once the eggs are cooked, serve them on a plate
