Ingredients: pineapple 500g, rice150g.
Accessories: Jinhua ham 50g peas 100g onion 50g.
Seasoning: salt 5g monosodium glutamate 5g soy sauce 5g onion 10g pepper 5g salad oil 15g each.
1. Cut the fresh pineapple in half, dig out the pineapple meat with a knife, cut it into small squares of 1cm, and keep 1/2 pineapple shells as containers for later use.
2. Wash the red pepper and cut it into cubes 1cm square with western ham.
3. Heat the oil in the pot with medium heat. When it is 50% hot (you can feel the heat rising when you put your palm on the wok), knock the eggs into the wok, stir-fry them into pieces and take them out for later use.
4. Heat the bottom oil in the pot, then add peas, diced red pepper and diced western-style ham and stir-fry for a while, then add steamed fragrant rice and stir-fry until it is completely dispersed.
5. Add diced pineapple, chopped eggs, soy sauce and salt into the pot and stir well.
6. Finally, put the fried pineapple rice into the pineapple shell and sprinkle with black raisins and cooked cashew kernel.
Cut along the edge of the pineapple shell with a knife, keep the pineapple meat with a thickness of about 1cm, and dig out the pineapple meat in the middle completely.
