2. The part close to the internal organs must be cleaned, otherwise it will affect the quality of chicken soup.
3. Put the washed old hen into a big container, use kitchen paper to absorb the water on the surface of the old hen, and then rub the salt on the washed chicken by hand until the salt completely melts on the chicken skin. Just wipe the chicken skin, don't let the salt touch the chicken.
4. Then put the salted chicken in the refrigerator for 20 minutes (rubbing salt before steaming will make the steamed chicken skin brittle).
5. Rinse the chilled chicken with purified water, remove the head and tip of the chicken, then put the treated old hen in a casserole, add1250g of water and steam for 30 minutes.
6. Then add a proper amount of salt to the pot and steam for another 20 minutes.
