Salad oil is a colorless and transparent oil refined by degumming, deacidification, decoloration and deodorization of liquid plant crude oil such as cottonseed oil, rapeseed oil, sunflower oil or soybean oil, and has no special flavor and smell of original vegetable oil. It is named after being used as a cold salad in Xiqiao. Salad oil does not foam, does not smoke, and is colorless and tasteless after heating, which has always been loved by consumers in developed countries.
Blended oil is a mixture of various vegetable oils on the basis of food hygiene, especially under the basic conditions of meeting the national hygienic standards for edible vegetable oils. Some of them are out of nutritional balance and complementarity, and more are considering the cost and market demand to determine the formula. For example, it is difficult to see cottonseed oil in the market, but cottonseed oil has a large output because of its bad reputation. Because of its large amount of crude cottonseed oil and poor quality, it contains gossypol, which is harmful to vision and reproductive ability. Consumers are reluctant to buy cottonseed oil, so they refine it and enter blended oil in large quantities, which can greatly reduce the cost of blended oil and avoid the notoriety of cottonseed oil. In fact, the fatty acid composition of refined cottonseed oil is quite good, and gossypol has been completely removed. The problem is that consumers can't all be experts in oil, so they can only compromise.
There are many kinds of blending oils, and manufacturers often use the name of Yueyou as the prefix. Different oil names in the prefix are the main components, but they are only included: for example, sunflower seed blended oil does not necessarily take sunflower seed oil as the main material; Safflower seed blending oil is not necessarily based on safflower seed oil, and lycopene blending oil is even less likely to be based on lycopene. In order to reduce the cost, many manufacturers use refined cottonseed oil and rapeseed oil as the main raw materials, because these two oils are large and cheap.
Some people say that China's edible oil market has gradually entered the era of salad oil and blended oil from the era of crude oil. This may be reasonable, because first, China tends to be westernized, and urban residents hate smoking when cooking and don't want to see too much greasy things; Second, it is difficult for urban residents to eat fresh soybean, sunflower seeds, rapeseed, peanuts and other freshly squeezed fragrant crude oil; Thirdly, in order to control the cost and meet the needs of consumers, only blended oil is the best, which can be added to cheap and easily available bulk oil, and can also adjust the composition of fatty acids and the taste of oil.
Specific introduction
Blending oil, also known as high blending oil, is an edible oil which is made by blending more than two kinds of refined oils (except seasoning oil) in proportion according to the needs of use. Blending oil is clear and transparent, and can be used for frying, frying, frying or cold salad. Generally, there are refined soybean oil, rapeseed oil, peanut oil, sunflower oil and cottonseed oil. Rice is selected as the main raw material, and special oils such as refined rice bran oil, corn germ oil, tea seed oil, safflower seed oil and wheat germ oil can also be added. The processing process is as follows: more than two kinds of refined oil esters are selected as required, and then deacidified, decolored and deodorized to prepare blended oil. The shelf life of blended oil is generally 12 months. At present, there are only enterprise standards for blending oil, but there is no national standard. The future development prospect of blending oil is good, and it will become one of the favorite oils for consumers.
There are the following types:
(1) The sunflower seed oil is the main ingredient, and the nutritional blended oil (or linoleic acid blended oil) with soybean oil, corn germ oil and cottonseed oil is adjusted to linoleic acid content of about 60%, oleic acid content of about 30% and soft fat content of about 10%.
(2) Economic blending oil, mainly rapeseed oil, with a certain proportion of soybean oil, its price is relatively low.
(3) Flavor blending oil refers to blending rapeseed oil, cottonseed oil, rice bran oil and peanut oil with strong fragrance into light peanut oil in a certain proportion, or blending the first three oils and sesame oil into light sesame oil in a proper proportion.
(4) Fried blending oil, which is made by mixing cottonseed oil, rapeseed oil and palm oil in a certain proportion, has low erucic acid content, balanced fatty acid composition, good crispness and high smoke point. All kinds of oils used in the above blended oil, except sesame oil, peanut oil and palm oil, are refined salad oil.
Salad oil salad oil, commonly known as salad oil, is a refined edible oil refined from crude oil. It can be used for raw food, so it is named because it is especially suitable for western salad. Salad oil is light yellow, clear and transparent, odorless, good in taste, and does not bubble or smoke when used in cooking. Refrigeration at 0℃ for 5.5 hours can still keep clear and transparent (except peanut salad oil). It is mainly used for cold meals and salad oil other than cooking and frying, and can also be used as raw oil for margarine, shortening, mayonnaise and various seasoning oils. Salad oil is generally made of high-quality oil, processed into crude oil, and then degummed, deacidified, decolored, deodorized, dewaxed and degreased to become the finished product. The packaging container of salad oil should be special, clean, dry and sealed, which meets the requirements of food hygiene and safety. Do not mix other edible oils, non-edible oils and mineral oils. The shelf life is generally 6 months. At present, there are soybean salad oil, rapeseed salad oil, sunflower seed salad oil and rice bran salad oil on the market.
The difference between blended oil and salad oil
Salad oil is pure and refined with crude oil, such as primary soybean oil;
Blended oil is equal to or greater than two kinds of oil, such as peanut oil+palm oil;
The price is hard to say. Some merchants use lower-priced oil to reduce costs, such as palm oil. Palm oil is not bad, but it is cheaper.
Generally speaking, salad oil is more expensive than blended oil.
