Recently, eleven departments jointly issued the "Guidelines on Cultivating Traditional Advantageous Food Producing Areas and Local Specialty Food Industries", which launched the "National Food Map", introducing some of the regional cuisines.
As a food lover, I rushed to check it out and saw many familiar foods in the introduction, but unfortunately I didn't see the specialties of my hometown Huainan. But it doesn't matter, today I'll introduce our partners to a few of the most famous and representative dishes in Huainan.
01, Huainan beef soup. As the people of Huainan surely know this food, even if it is put into the Anhui cuisine is also able to rank on the name. The oversized iron pot simmers nutritious beef bone soup, and the pot is surrounded by bright red dried chili peppers. The soft and smooth vermicelli, charred bean cakes, tender meat, slices of beef of uniform thickness, look at people's appetite doubled.
Additionally, the beef soup in Huainan is not expensive, and a serving of authentic Huainan beef soup is only 10 dollars. Every time I eat Huainan beef soup, I like to go to the snack street next to the Huainan United University or An Polytechnic Cafeteria, I think these two places of Huainan beef soup is the most authentic, the amount is also the largest.
02, Shouxian spicy soup. When I was a kid, my grandpa would take me to a restaurant every weekend, and I would always ask for a spicy soup. The ingredients in the soup were peanuts, shredded kelp, shredded pork, gluten, etc. At that time, a bowl of spicy soup was 50 cents, but now it's 1 yuan a bowl.
I would add a little bit of dried chili powder from the table every time I drank the hu xiao soup, and hooted and hollered and drank it, and it tasted delicious. Now that my grandfather has left me, I still occasionally go to the street in the morning to order a bowl of hot pepper soup, which is also a way to express my nostalgia.
03, Shouzhou round son. The Shouzhou round rice balls have been on the internet for a while now, because Zhang Songwen, the actor who played Gao Qiqiang in "Rampage", praised the deliciousness of Shouzhou round rice balls on a social media platform. The main ingredients of Shou Zhou Yuan Zi are egg, flour and pork, then add green onion and ginger in the process of making it, roll it out, sprinkle it with a layer of cornstarch, put it into a pot of boiling water to cook for a while, and then you can fish it out to eat it when the time is up. (In addition, the Shouzhou round rice ball symbolizes reunion and happiness, which makes it a must-order dish for wedding banquets in the Huainan area)
04, Bakongshan Tofu. Bakong Mountain is the birthplace of tofu, which was inadvertently invented by Liu An, the king of Huainan, and has now become a delicacy all over the country. Some of the more famous dishes of tofu in Huainan are "Seasonal Soybean Cake" and "Blooming Flowers and Fortune".
The dish is simply deep-fried bean curd, which is derived from the idiom "时苗留犊", meaning "to be innocent," and is very similar to the characteristics of bean curd itself. The "Blossoms of Fortune" is a carving of tofu into an edible "work of art" that is both beautiful and delicious.
In addition to this, there are other delicacies in Huainan, such as Wabu Lake Silver Fish, Gaotang Lake Crab, Crispy Cake, and Sesame Round, which you are welcome to try.
