Babao Douchi in Linyi is made from eight raw materials, namely sesame oil, white wine, almond, fresh ginger, black bean, pepper, perilla leaf and eggplant, by closed natural fermentation for one year, so it is called Babao Douchi.
Douchi is delicious, but it's not easy to do it. It uses a lot of materials, its manufacturing process is complicated, it takes a long time, and it is easy to be broken if it is not paid attention to. Linyi's traditional production method is as follows:
Cook the black beans, take them out and dry them in the sun, then seal and ferment for a week, and take them out after one week. The black beans have become hairy edamame. Wash and dry the edamame seeds, and wait for the encounter with other ingredients.
Pepper should be ripe but not fried, and eggplant should be cut into small pieces of equal size. Cook the almond rice and rub off the almond skin. Ginger and perilla leaves should also be screened, and then salt should be added.
Most of the raw materials of Babao Douchi are easily available in autumn, so the season of making Douchi is mostly in autumn. 15-day curing period, 15 days later, add sesame oil and wine to the marinated beans, mix them evenly, and then put them in a jar and seal them.
Ceramic jars are the best jars for pickling douchi, which are easy to preserve for a long time and are not easy to lose their fragrance. Sealed containers are fermented in sunlight in spring and autumn, and kept in the shade in summer.
