Steps in how to make preserved fish and tofu soup
1. preserved fish should be cooked for 5 to 6 minutes in boiling water beforehand.
2. Tofu is also best blanched to prevent it from breaking.
3. Heat the oil in a pan for 5 minutes, add the fish on low heat and fry slowly.
4. When the surface of the fish is slightly yellow, add ginger, green onion or not.
5. Drizzle in cooking wine and add cold water.
6. When the water is almost boiling, add the chopped tofu, sliced mushrooms and vegetable leaves. Cover the pot with a lid.
