Tofu is a common character in home-cooked dishes, and there are many ways to make it.
Have you ever tried Jinsha Tofu? The name is nice, but it is actually fried tofu with salted egg yolk. Everything wrapped in salted egg yolk is golden, salty and delicious. Today I will introduce the home cooking method of this dish.
Ingredients: a piece of tofu, 2 salted duck eggs, a little green onion and grated ginger. A little cooking oil and a small spoonful of lard.
Method:
1. Cut the tofu into small pieces with a knife, separate the egg yolk and egg white from the salted duck egg, chop the egg white slightly into pieces, and grind the egg yolk into powder with a small spoon. Blanch the tofu in water (add a pinch of salt) to remove the beany smell.
2. Blanch the tofu, drain it and drain it for later use.
3. Put an appropriate amount of oil in the pot, and add a small piece of lard. Adding lard to stir-fry this dish will make it more fragrant!
4. When the oil is cold, add the egg yolk powder, stir-fry slowly over low heat until it turns into sand.
5. Stir-fry until it is like this (big bubbles are formed, and the big bubbles are thick again) It turns into many small bubbles, and the egg yolk and oil are evenly mixed)
6. Then add the tofu and continue to stir-fry over low heat.
7. Add chopped green onion and minced ginger
8. Continue to stir-fry evenly
9. Then add the salted egg white and stir-fry
10. Stir-fry evenly and then turn off the heat, because the salted egg white and salted egg yolk contain salt. It tastes good, so there is no need to add additional salt to this dish.
11. After taking the pot out of the pot and putting it on a plate, sprinkle some chopped green onion on top for garnish.
A simple and easy to make, fragrant, beautiful and delicious Jinsha Tofu is right in front of you. Eat it with chopsticks. The tofu is soft and tender, salty and delicious, very delicious!
