Anchovies soup
Ingredients: five anchovies, ginger 10g, and appropriate amount of coriander. 6 grams of salt, 5 grams of cooking wine and 2 grams of pepper.
Exercise:
1. Remove the scales and internal organs of anchovies, and the most important thing is to clean the intestines and stomach. Then wash the inside and outside, and control the water for later use.
2. Boil the oil in the pot. When the pan is hot, add cold oil, sprinkle a little salt and put a few slices of ginger. When the oil is hot, hold the fish tail with your hands and put the fish into the pot carefully. Don't boil the pot quickly. Shake the bottom of the pot to let the oil flow in and prevent the fish from sticking to the bottom of the pot. Fry until one side is solidified, and then open both sides. Stir-fry both sides, stir-fry onions until they are fragrant. After the fragrance comes out, pour the cooking wine along one side of the pot. Then use hot water and fill it up at one time to avoid adding it later, which will affect the color and consistency of fish soup. Cook on low heat 10 minutes, and you will find that the soup is thicker and whiter. Don't underestimate the whole process, but always keep the fish soup boiling.
3. After boiling 10 minutes, add salt and pepper, cook for a few more minutes, and then pour in coriander. Is this delicious? Anchovies soup? I'm ready.
