Northeast cottage dish-yiguochu
"One pot out" is a strange name, in fact, it means "the main course and staple food are served together". In the pot, there are stews and cakes. The dishes are stewed at the bottom of the pot, and the cakes are attached to the side of the pot. The northeast peasant's one pot is served with an open fire in an iron pot, which embodies the bold and unconstrained character of the northeast people. Most of the pots have ribs, beans and potato pieces. There are cornmeal cakes around the iron pot, which are rich in materials and attractive in aroma. The beans are green and green, but not rotten. The potato pieces are stewed until they have no edges and corners, and they melt in the mouth, while the ribs absorb the fragrance of green vegetables and taste quite good.

Of course, the main course can be changed to fish, beef, ribs, chicken, etc., or you can put a circle of small flower rolls in the pot, which tastes special.

Today, I will share with you a family version of the "one pot" approach.

Dough part

Ingredients: wheat flour 300g, water 170ml, yeast 3g, chopped green onion, salt and pepper powder.

(1) Pour the yeast into the water to melt, then add a small amount of it into the flour for many times, stir it into a flocculent state without dry powder, and then knead it into dough without being very smooth, and apply plastic wrap for fermentation 1 hour, with the help of an oven or a proofing box;

(2) Ferment until it is twice as large and the inside is honeycomb-shaped. Take out the dough and knead it into a smooth dough, then roll it into a rectangular dough, sprinkle chopped green onion, edible oil and salt and pepper powder, and fold it in half like a quilt.

(3) Cut into even strips, take two strips and stack them, press them with chopsticks, stretch them long, and twist them with your left hand to the right and your right hand to the left.

Stewed ribs

Ingredients: ribs 400g, potatoes 1 piece, green beans 400g, spices (onion, ginger, garlic, pepper, dried pepper and star anise), soybean sauce, soy sauce, soy sauce and oyster sauce.

(1) Put the ribs in the pot with cold water, blanch the onion and ginger cooking wine for 3 to 5 minutes, wash and drain the water for later use;

(2) cut potatoes into hob blocks, cut green beans into sections, fry them in a pan until they are half cooked, and take them out for later use; Fry the ribs in a pan, then add spices and saute;

(3) Add soybean sauce, light soy sauce, dark soy sauce and oyster sauce according to the ratio of1:2:1:1,stir-fry, pour in a little more water than ribs, stew for 25 minutes, then pour in potatoes and green beans and stew for 10 minute.

(4) Finally, put the roll dough on the surface of the stew in turn, and stew for 10 minute until the soup is slightly dry.

Experience summary:

When putting the dough into the flower roll, the water should not be too little, which is about the same height as the ingredients. If it is not enough, you can add boiling water to avoid burning it dry when stewing the flower roll.

It's too satisfying to have a pot of braised pork ribs. The pork ribs are soft and rotten, the rolls are soft and fluffy, and the soup is really delicious. Let's do it quickly!
