Preparation:
1. Clean the pork and cut into slices, then cut into long strips with a knife.
When cleaning pork, do not rinse it directly with running water at the faucet, otherwise the dirt will most likely splash onto the chopping board or table along with the water flow. When cleaning, you can directly soak the pork in a basin of light salt water for 5 minutes, and then scrub it clean. In addition, washing with flour is also a good choice.
2. Add edible salt and pepper powder to the tenderloin strips, knead thoroughly and marinate for 20 minutes to add flavor.
You don’t need to add too much seasoning, because there are also seasonings added to the batter, otherwise it will be slightly salty when fried later. Sichuan peppercorns must be freshly roasted and freshly ground. Those available on the market will not have a numbing taste. In a dry pot, stir-fry over low heat until fragrant, then place in a food processor and grind repeatedly.
3. When marinating the meat, we process the powder slurry. The batter for crispy pork must be adjusted with sweet potato starch. Add 3 eggs to 120 grams of sweet potato starch, then add a little salt and pepper powder, and stir into a fine and sticky paste.
Sweet potato starch is very sticky and will not peel off when fried. Even if you have to rinse the short crispy meat when cooking hot pot, the skin on the surface will not fall off. Seasonings have already been added when marinating the meat, so add less seasoning this time.
4. Mix the marinated tenderloin into the flour paste and mix well.
5. Line the baking pan of the air fryer with oil paper, then put the tenderloins on top one by one, fry at 180 degrees for 10 minutes, then turn over and fry for another 10 minutes.
