Tip:

1, mutton wants to get rid of odor. First, mutton must be blanched in cold water to squeeze out blood and foam. Second, we should fry the mutton and force the fat out, which will greatly reduce the odor. So these two steps are indispensable. Many people like to soak mutton in water in advance, but personally don't like it.

2. Spices can be mixed at will, so you don't need to put too much rock sugar to avoid being too sweet. Rock candy can play a refreshing role. Don't stew mutton with water first, cook it with beer for a while, remove the fishy smell, and then stew it with water.

Because the mutton is hot after stewing for a period of time, remember to stew it with hot water, otherwise it will be fleshy when it is cold and hot. After the mutton is cooked, put the white radish, which is not suitable for stewing for too long.
